We are delighted to tell you about two new appointments to the Pierhouse team this autumn. We have a new Head Chef, Michael Leathley joining us as we bid a fond farewell to Sergejs Savickis, who after 3.5 years is heading off to pastures new – wishing you well Sergejs. Also, Rachel MacKenzie, a well known face in our front of house team over the last few summers, is appointed Restaurant Manager.
Head Chef Michael Leathley, originally from the North East of England, realised at a young age that becoming a Chef was the career path for him. After a 14 year stint in London, Aberdeen and most recently in A’Challtainn Fish Restaurant in Glasgow, Michael looks forward to heading up the Pierhouse kitchen brigade and getting out and about with our fantastic local suppliers.
Michael, whose grandad was a day boat fisherman on the river Tyne, is no stranger to preparing delicious dishes from the sea – and field - to plate. “I enjoy letting the food speak for itself using classic, simple techniques. Cooking at The Pierhouse is a celebration of the environment around us with dishes that respect the abundance of local produce and the people who spend their lives working on the land and sea to bring us the finest produce.“
Micheal continues “The real luxury in cooking these days is making use of what's here, now. It's a joy to use produce that is in season, available locally, with known quality and provenance, sourced wherever possible from within 50 miles of the hotel.”
Michael likes to think of it as cooking which 'brings the outside in' with dishes that are inextricably linked with the land and the sea.
Rachel MacKenzie has been appointed Restaurant Manager. Rachel, a Port Appin local, is a recent graduate from Strathclyde University where she studied Marketing, Hospitality & Tourism. She has loved working in the front of house team at The Pierhouse over the last few summers and is excited to take on this new role.
Rachel told us “I’m looking forward to building on the restaurant’s strong reputation and fantastic team by sharing my enthusiasm for providing our guests with a friendly, efficient service. It’s lovely to be able to build a rapport with guests in the bar and restaurant and know that they have loved their Pierhouse visit.”
Fiona McLean, the hotel's General Manager told us “I’m very excited about these two new appointments and it’s fantastic to see our team go from strength to strength. I have worked with Michael before and I am very much looking forward to seeing what he does with the superb natural larder available at The Pierhouse.”
Fiona continues “I’m also delighted to see the next generation of hotel management coming through. This new role of Restaurant Manager comes at an exciting time as we develop our future plans and it is an excellent opportunity for Rachel whose personality and skill set are a perfect match for the role.”
