Oven baked fillet of halibut with creamy organic white quinoa, spring onions, sweet cured cherry tomatoes, crisply capers and rocket pesto.
Pan seared fillet of rainbow trout with courgette, fennel and orange salad with rosti potatoes and brown shrimp dressing.
Couscous, Spinach and Ricotta Cake
Pan fried couscous, spinach and ricotta served with grilled asparagus, steamed broccoli, summer lettuce and roasted red pepper coulis.
